The Bikini Cocktail

Serves 10 people

For the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Syrup: Put the listed components in a saucepan, heat until it reaches a simmer, stirring to dissolve. Next, take off the heat allowing it to reach room temperature completely. Transfer into an sterilised bottle, cap it and store chilled, where it will keep for up to a month.

For the Cocktail Base: Mix all the liquid ingredients into one sizeable container, allow it to infuse for one hour, then filter it preferably using a fine cloth, making it fully clarified.

For serving: Pour 85ml from the batch mix into a cocktail shaker packed with ice, and agitate gently for one minute to chill. Strain into a frosted cocktail glass or similar, top with the cranberries adding the final touch using a quick spritz of the essential oil over the drink.
